Ingredients

  • 2 1/2 cup almond flour
  • 6 Tbsp butter melted
  • 2 Tbsp cream cheese
  • 2 eggs beaten
  • 1 Tbsp Vanilla
  • 1/2 tsp Xanthan gum optional but recommended
  • 1/4 cup erythritol
  • 1/4 cup keto brown sugar
  • 1/2 -3/4 sugar free chocolate chips

Instructions

  • Mix all dry ingredients and set aside.
  • Melt butter and cream cheese set aside.
  • Transfer all ingredients wet and dry except the sugar free chocolate chips into a blender or food processor. Blend till smooth
  • Transfer batter to a clean bowl, then mix in chocolate chips ( save some to put on top of the cookie dough balls before baking )
  • Refrigerate dough for 30 mins
  • Preheat oven to 350*F
  • Scoop out Tablespoonful by Tablespoonful onto a parchment paper lined baking sheet.
  • Press down dough balls to the thickness you want your cookie to be. ( this is important since these keto chocolate chip cookies won't spread as they bake like regular chocolate chip cookies ) Stick in the saved chocolate chips on top of the cookie dough.
  • Bake in preheated oven for 12-15 mins or until edges begin to brown.
  • Allow to cool. Then enjoy!
