Ingredients
1cupalmond flour
1/2medium onion
1/2medium red bell pepper
1small habenero pepper
2Tbspcrayfishoptional
1garlic cloveoptional
1tspbouillon powder or salt to taste
2Tbsppalm oil (melted) you can sub with olive oil or coconut oil
4eggsdivided- 2 boiled and 2 raw
1 ¼cupof water
1can of tuna fish
Instructions
Preheat oven to 375ºF
In the jar of your blender, add all the ingredients except the boiled eggs, tuna and palm oil.
Blend till smooth then transfer to a mixing bowl.
Cut boiled eggs into quarters
Add the tuna fish and palm oil then stir to combine.
Taste for seasoning and adjust if needed.
Grease your silicon cup cake pan with cooking spray. Pour the batter into the pan.
Add the egg quarter on top of each moi moi
Transfer cupcake pan onto a cookie sheet, fill the cookie sheet with water then cover the cupcake pan with foil.
Bake in the oven for 35- 40 mins. The moin should be done.
Bring out from the oven, allow to cool a bit. Then enjoy

Notes
For ease of blending, add the ingredients in this order water, onions, garlic clove, red bell pepper, habanero pepper, two raw eggs, bouillon powder, almond flour, crayfish.
If you want to keep carbs really low serve this recipe as 8 servings which means one portion per serving. The net carbs will be 3.8g /serving
If you are on maintenance, you can have 2 Portions per serving and the net carbs would be 7.6g/ serving.
