Transfer all ingredients wet and dry except the sugar free chocolate chips into a blender or food processor. Blend till smooth
Transfer batter to a clean bowl, then mix in chocolate chips ( save some to put on top of the cookie dough balls before baking )
Refrigerate dough for 30 mins
Preheat oven to 350*F
Scoop out Tablespoonful by Tablespoonful onto a parchment paper lined baking sheet.
Press down dough balls to the thickness you want your cookie to be. ( this is important since these keto chocolate chip cookies won't spread as they bake like regular chocolate chip cookies ) Stick in the saved chocolate chips on top of the cookie dough.
Bake in preheated oven for 12-15 mins or until edges begin to brown.
