    Keto Microwave jam is easy to make, delicious and hassle free. Making jam in the microwave is one of the easiest way to make jam. Seriously! All you need to make this is your fruit of choice which in this recipe are Strawberries, some sweetener, a large microwave safe bowl and a microwave.

    This keto Microwave jam requires just 3 ingredients and about 10 mins and you have this deliciousness ready to slather on your Keto bread, as a filling for your keto jam doughnuts or even as a topping for keto cheese cakes. PBJ sandwiches just got better. This will be your go to jam because why not? It's a delicious, homemade jam without all the sugars.

    How to make Keto Microwave Jam

    Regular Homemade Jam is made by cooking down fruits mixed with sugar. Commercial Jams are made by adding pectin to help stabilize the structure of the jam.

    All you need to make this keto Microwave jam are just 3 ingredients which are;

    • Your choice of keto berries
    • Sweetener ( xylitol, Erythritol or Lakanto Classic )
    • Lemon juice

    We simply swapped out the sugar for a keto sweetener.

    What fruits can be used?

    You can use fresh or frozen fruits to make this keto microwave jam. Make sure to let it thaw before using.

    • Strawberries
    • Raspberries
    • Blackberries
    • A mix of all three

    Can Keto Microwave Jam be made on the stove top?

    Sure, definitely. The concept of making it in the microwave is the same concept used to make jam on the stove top. The aim is to cook down the fruit in sugar/ sweetener till it thickens and forms jam. The only difference is that you have to keep stirring the jam on the stove top while you can easily walk away if the jam were to be heating up in the microwave then return as soon as the microwave beeps indicating a completed session. My home made strawberry jam and my lemon blueberry chia jam were made on the stove top.

    What is the consistency of this Keto Microwave Jam?

    This jam isn't as thick as my stove top strawberry jam in which I used gelatin or my lemon blueberry chia jam which was thickened with chia seeds. But it has a perfect jelly like spreadable consistency. This jam thickens as it cools.

    How to store homemade jam

    This keto microwave jam has no preservatives so like any other home made jam, it is best stored in the refrigerator in a sterilized glass jar. It will stay fresh for up to 10 days.

    Quick Tips to remember when making keto microwave jam

    • You need a large microwave safe bowl (at least 3-4 times the size of the berries) and a microwave splatter guard because the contents of the bowl will bubble up while cooking.
    • If using frozen fruits, let it thaw in the refrigerator overnight before using.
    • You don't have to blend your fruits till smooth after making the jam. You can use a potato masher instead of a stick blender.
    • Make sure to sterilize your glass jar before use by boiling in hot water.

    Equipment

    • Microwave
    • 8 oz ball jar
    • Microwave safe bowl
    • Stick blender [ optional ]

    Ingredients
      

    • 16 oz Fresh or frozen Strawberries
    • ½ cup xylitol/ Erythritol/ Monkfruit
    • 1 ½ tablespoon lemon juice

    Instructions
     

    • Wash strawberries and cut them up. Then transfer to a big microwave safe bowl. Cover with splatter guard.
    • Pour sweetener and lemon juice into the bowl of strawberries
    • Mix with a spoon
    • Put in the microwave and microwave on high for 10 mins.
    • Mash it up or use a stick blender for a smoother consistency.
    • Let cool then transfer into a sterilized mason jar.
    • Keep in the refrigerator for up to 10 days
