Since I tried this low carb dough aka fat head dough I haven't looked back. I am not really a pizza person but this low carb pizza makes the cut whenever I crave pizza.
What is Fathead dough?
Like I mentioned above, this versatile dough is popularly know as the fathead dough in the low carb world.
Fathead dough is so easy to make but could be a bit tricky, so read on so I can walk you through. This low carb dough is made with just 4 ingredients. How cool is that. It all comes together in less than 15 mins even cooler.
What is fathead dough Made of?
Fathead dough is made of mozzarella cheese, cream cheese or butter, almond flour or coconut flour, and eggs.
Can I make fathead dough without eggs?
I haven't tried making this mozzarella dough without eggs but I have read people say they have had success with making fathead dough flax eggs.
How to make Fathead dough
A mix of Cream cheese, Shredded Mozzarella cheese, An egg and Almond or coconut flour will do the trick. And this dough is truly magical.

Tips for recipe success:
- The science behind the fat head dough is the addition of mozzarella cheese or any cheese that can melt and become stretchy. Since almond flour and coconut flour do not contain gluten, the mozzarella cheese helps to fill the gap for the absence of gluten.
- The cream cheese and mozzarella cheese need to melt completely for best results.
- I like to use cold eggs because it mixes in properly and it reduces the risk of eggs getting scrambled from the heat in the melted cheese.
- Wet hands help to reduce the stickiness of the dough and make it easier to handle.
- If the dough refuses to come together and becomes stringy, pop it into the microwave for about 20 seconds for the dough with smoothen out.
Modified Fathead dough
What is Modified Fathead dough?
Modified Fathead dough as the band implies simply means a modification of the original Fathead dough. These modifications include addition of baking powder, yeast, sweeteners and sometimes unflavored protein powder to improve keto baked goods.
This modified Fathead dough gives room for a better texture and taste for keto breads.

Can Fathead dough be made ahead?
Yes you can. Fathead can easily be made ahead of timeeven though I find it unnecessary to do that since this dough takes pretty much 10 mins to whip up. Here is how you can make your fathead dough ahead.
After making the dough, wrap tightly in a cling film and store in the refrigerator for up to a week. When ready to use, till our in between two parchment paper and bake. If you find it hard to roll out, Lightly warm it up in the microwave to make it easier to roll out.
Alternatively, bake the crust and store in between 2 parchment papers inside a freezer bag for up to a week in the refrigerator or to a month in the freezer

Can fathead pizza dough be frozen?
Yes you can. Similar to my make ahead instructions above, you can either make the dough, wrap tightly in a plastic wrap and freeze for up to 1 month.
When ready to use Let it thaw overnight in the refrigerator, then roll out and bake.
Or you can pre bake the crust and freeze for up to a month. When ready to use, add toppings and bake straight from the freezer. No need to thaw.
How long does fathead dough last in the fridge?
Fathead dough can be stored in the fridge for up to a week and in the freezer for up to a month.
What does Fathead dough taste like? Does it taste Eggy?
This Keto dough tastes like cheesy bread. It sure tastes good and fear not, it doesn't taste eggy at all.

Can fathead Dough be made nut free?
The original fathead dough was made using almond flour. Good news, fat head dough can be made nut free by swapping the almond flour for coconut flour but not at a one to one ratio.
Coconut flour is much more liquid absorbing than almond flour so for this recipe, you would need an extra egg and less coconut flour. ⅓ cup of coconut flour for ¾ cup of almond flour in this recipe.
Is Fathead dough gluten free?
Fat head dough is made with almond flour, coconut flour or flax meal. These are gluten free flours. Therefore fathead dough is gluten free.
Can I use butter instead of cheese to make fathead dough?
You can. I used butter to make my keto dinner rolls.

What recipes can I use fathead dough for?
I have used this fathead dough to make lots of delicious Recipes. Fat head dough is best used for recipes that require the bread texture. It's a keto alternative to bread dough.
When to use the Original fathead dough recipe
When you require a crispy outcome like in fathead crackers or a thinner pizza crust

Fathead dough recipe
Ingredients
Original Fathead dough for crispy pizza crust
- 1 ½ cups shredded low moisture mozzarella cheese
- ¾ cup blanched almond flour
- 2 tbs cream cheese
- 1 egg beaten
Modified Fathead dough for a thicker pizza Crust
- 1 ½ cups shredded low moisture mozzarella cheese
- 1 ¼ cup blanched almond flour
- 2 tbs cream cheese
- ½ tablespoon erythritol
- 7 g active dry or instant yeast
- 1 egg beaten
Modified fathead dough for breads
- 2 ½ cup Shredded low moisture mozzarella cheese
- 1 ½ cup blanched almond flour
- 2 tablespoon Cream Cheese
- 1 tablespoon baking powder
- 7 g active dry or instant yeast.
- 1 tablespoon erythritol
- 2 eggs beaten
Instructions
- Measure out flour (and other dry ingredients if making modified fathead dougset aside.
- Put cream cheese and mozzarella cheese together in a microwave safe bowl.
- Melt cheese in the microwave in 30 seconds increment stirring in between until well melted (usually takes about 1 min 30 secs to 2 mins max to get cheeses fully and evenly mixed)
- Add the flour to the melted cheese and mix this gives the cheese sometime to cool off before adding the beaten egg(s).
- Add the egg(and mix till well combined. The dough becomes very sticky at this point.
- Let it rest for about five minutes
For pizza.
- Roll out in between two parchment paper sheets to the desired shape of pizza crustbefore baking alternatively spread with wet hands on parchment to form desired pizza shape then bake at 400 F for 8 mins
- Bring out from oven, Spread marinara sauce on pizza crust then Put desired pizza toppings.
- Transfer back to oven and bake for another 5 mins till Mozzarella cheese topping melts evenly.
For Breads.
- Put modified fathead dough into desired baking pan and bake.
