How to make keto Cinnamon Toast Crunch with pork rinds.
You will need good quality pork rinds that are crispy and crunch. No soft ones please. I highly recommend these pork rinds, cos I find that they always work well for my pork rind cereals. Oh yes you heard right. Cereals. I also made pork rind Cocoa Puffs cereal. So if you make a lot of recipes with pork rinds then this is the size you should buy.
There are two ways I make my keto Cinnamon Toast Crunch pork rinds, the oven method and the oil spray/ melted butter method.
I prefer the oven method because the cinnamon sugar sticks better. When I am in a bit of a rush I use only the spray method.
Pro Tips
1. I can't over emphasize the importance of breaking up the pork rinds into smaller bits and for good reason too. Pork rinds are pork skins and therefore are meat. When soaked in liquid it may become soggy ( no different from regular cereal) breaking it up in bits reduces the chance of have chewy chunks in your mouth.
2. Lots of cinnamon will help mask the meat taste of the pork rinds to a large extent. Not like it's there really, but it makes the pork rinds taste more like Cinnamon Toast Crunch.
3. Though you can gobble these keto Cinnamon Toast Crunch up right after making them. Try storing them in an air tight container or cereal keeper overnight and you will see the difference in taste. The airtight container further helps the pork rinds develop the flavor by absorbing the aroma of the cinnamon.

Keto Cinnamon Toast Crunch

Ingredients
8.8oz / 250g pork rind
2 tablespoon cinnamon
½ cup Lakanto classic or golden
¼ cup butter melted (optional)
Coconut oil spray (optional)
Directions
Break up pork rinds into small bits
Mix cinnamon and brown sugar together in a bowl and set aside.
Oven method:
Preheat oven to 350•F.
Transfer and spread broken pork rinds in a baking sheet.
Bake in the oven for 6-8 mins to release the oils from the pork rinds
Take out pork rinds from the oven pour into a deep bowl.
Pour the cinnamon sugar mix into the hot pork rinds. Mix with spatula then your clean hands when it has cooled a bit..
Work in the cinnamon sugar till well combined.
Let cool completely. Transfer to an airtight container and store in a cool dry place.
Oil spray / melted butter method:
Spray the pork rinds generously with coconut oil or drizzle with melted butter.
Pour the cinnamon sugar mix over the pork rinds, mix thoroughly and store
Notes:
If using butter, make in smaller quantities since or store in refrigerator to prevent the butter from going bad.
Sometimes when using the oven method, the pork rinds may not release enough oil for the cinnamon sugar to stick. Simply spray on some coconut oil spray while the pork rinds are still hot before mixing in the cinnamon sugar.
