    These Keto Pancakes are easy to make considering that they almond flour pancakes, they are surprisingly fluffy and delicious. Looking for a keto pancake recipe that's succulent with the perfect tender crumb that's super close to any hot cake recipe you miss. Another winner in my book.

    Keto Pancakes Recipe

    To be clear on this, Keto Pancakes do not taste exactly like the pancakes you were used to while growing up, but they taste darn good in their own right. ( these are not egg pancakes by the way if you know what I mean. I am totally averse to sweetened eggs being called pancakes)

    If you have decided to go the low carb / keto, you have to be prepared for a whole new world of foodie adventure- a gradual process of retraining your taste buds.

    Keto Pancakes can never taste like regular pancakes because regular pancakes are made with regular flour, Almond flour isn't regular flour, almond flour is a nut flour so there is a difference in taste.

    How to make Keto Pancakes (Almond flour pancakes)

    These keto pancakes come together in a few minutes. All you need is some almond flour, eggs, sweetener of choice, butter, vanilla extract and baking powder and you have yourself a great keto breakfast.

    I love to use the blender to make my keto pancakes because it produces pancakes with tighter and smoother crumbs and this is because the texture of almond flour is not as smooth as regular flour.

    If you would rather not use your blender, that's fine, the pancakes will still taste amazing with a slightly different texture.

    When it's time to cook the pancakes, I either use my non stick griddle or this cute pancake maker.

    I love these mini pancake makers because they are individual pancake makers and the kiddos can easily make their pancakes without me worrying about them getting hurt by fire from the stove.

    Bonus they make great chaffles and waffles 😁

    How to make Keto Pancakes in a blender.

    Start with all the liquids that would go into the pancakes at the bottom of the blender. That way it's easier to blend the batter without needing too much liquid.

    How to make Keto Pancakes without a blender.

    Mix your dry ingredients, then whisk your dry ingredients into your wet ingredients till well combined. Scoop by 3 Tbsp onto the heated griddle or pancake maker.

    Quick tips to make Keto Pancakes

    • If cooking Pancakes on the stove top
    • Lightly spray griddle with coconut oil spray or spread some butter on the griddle.
    • To is very important make sure you scoop small amounts about 3 Tablespoons of batter per pancake.
    • Spread out batter lightly with the back of a wet spoon. (keto almond pancake batter is usually thicker than regular pancake batter so you need to spread the batter with the back of the spoon as soon as you put it on the griddle.
    • Cook on medium high heat and do not flip until you see some bubbles.
    • Use a pancake flipper/ spatula. I recommend using this pancake spatula because it has a wider surface than regular spatulas. That way it's easier to flip the keto Pancakes without breaking them.

    If cooking on a pancake maker

    • Lightly spray the cooking surface pancake maker with coconut oil spray, scoop in the pancake batter and cover the lid.
    • The pancake cooks in about 2 mins.

    What kind of Syrup can I use for Keto Pancakes?

    Any sugar free syrup would be perfect. I love to use the following brands.

    • Lakanto Sugar Free Maple Syrup
    • Walden farms Sugar Free Pancake Syrup
    • Choc Zero Sugar Free Maple Syrup

    These Keto Pancakes are easy to make considering that they almond flour pancakes, they are surprisingly fluffy and delicious. Looking for a keto pancake recipe that's succulent with the perfect tender crumb that's super close to any hot cake recipe you miss.

    Ingredients

    • 2 large eggs
    • ½ cup almond milk or water
    • 2 Tbsp melted butter
    • 1 ¼ cup blanched almond flour
    • 1 teaspoon vanilla extract
    • 2 Tbsp erythritol or erythritol/monkfruit blend
    • 1 teaspoon baking powder
    • ¼ tsp xanthan gum optional

    Instructions

    • Add all ingredients to the blender, starting with the liquid ingredients.
    • Blend till smooth.
    • Scoop by ¼ cup onto a greased and heated cast iron skillet.
    • Flip when you notice bubbles on the surface.

    Notes

    1. Alternatively you can use this dash mini pancake maker.
    2. It's best to Pour a little batter at a time. If the batter is too much you may find it difficult to flip pancakes.
