This sugar free version hit the spot for me, it has the crunch, crisp and caramelized sugar that the original version has. With 2.2 net carbs per serving. This candied nuts recipe is a winner and a keeper. I love love love it. Being on a Keto Diet and being able to stick to it for the long haul means you have to find recipes that work for you and for me, this is definitely one of them.

How to make Sugar free candied almonds.
You will need a few ingredients
- Brown sugar substitute ( store bought or homemade)
- Salt
If you like the caramelized sugar crystal look on Candied Almonds, Lakanto monkfruit golden or homemade brown sugar substitute made with Lakanto classic or erythritol/xylitol is the way to go they are the closest to sugar and act like sugar but without the negative effect on blood sugar.
In this recipe I used the my Homemade sugar free brown sugar made with Lakanto monkfruit classic but feel free to use golden lakanto monk fruit for the brown sugar effect.
Depending on the sweetener used, my keto cinnamon sugar, can be used in this recipe. You won't need to add extra cinnamon if you use it. If you made the keto cinnamon sugar with Lakanto monkfruit golden that's perfect, for the cinnamon brown sugar flavor but if you used Lakanto monkfruit Classic, erythritol or xylitol then it would be simply cinnamon candied nuts.

Brown Sugar Cinnamon Candied Almonds
Ingredients
- 2 cups Raw almonds
- ⅔ cup brown sugar or Cinnamon brown sugar
- ½ teaspoon of cinnamon if you use just the brown sugar
- 2 tablespoon water
- ⅛ teaspoon salt
Instructions
- Pour water, Sweetener, vanilla and salt into a heavy bottom sauce pan. Stir on medium heat till well combined.
- Add the nuts into the liquid and start stirring.
- Stir continuously for 3 minutes until you see the liquid caramelizing ( it thickens )
- Turn off the heat ( there will still be some liquid. That liquid will eventually become the caramelization on the nuts)
- Transfer caramelized nuts onto a parchment paper lined cookie sheet ( be very careful it's very hot and you can get burned)
- Allow to cool then break caramelized nuts into smaller chunks
- Store in an air tight container for up to 2 months
