Shortbread cookies, Shortbread fingers all of them have always been my weak point. Especially during the Christmas season when it's in abundance in my local Costco store.
That buttery, sweet, melt in your mouth cookie that we all love. Since this cookie happens to be my weakness I decided I was going to figure out how to 'ketorize' it if I intend to have some peace in my new WOE.
What are Keto Shortbread Cookies made from?
The traditional Shortbread cookies are made with just 3 ingredients with an occasional 4th. The 3 ingredients is the butter, sugar and flour. The occasional 4th being the vanilla extract.
These keto Shortbread Cookies are made with butter, almond flour, sweetener, xanthan gum and vanilla extract.
Quick tip! If you want to make lemon shortbread cookies, use lemon extract instead of vanilla in this recipe and add 1 teaspoon of lemon zest if you want it even more lemony.
How to make Keto Shortbread Cookies
After several trials I eventually got a ratio that worked perfectly for these keto shortbread fingers. These are melt in your mouth just like the carb loaded version aka the original ?. They taste very close to the original. And honestly has kept my cravings at bay. You really need to try these.
All you need to do is mix the ingredients together starting with creaming the butter and sweetener till fluffy. Then add in the Blanched Almond flour. and vanilla extract. The dough will look crumbly. Bring together into a ball with your hands.

Keto Shortbread Fingers
Ingredients
- 2 ½ cups almond flour
- 6 tablespoon salted butter soft but still firm
- ½ cup erythritol
- 1 tablespoon Vanilla extract
- ½ teaspoon xanthan gum
Instructions
- In a clean bowl, cream butter and erythritol till light and fluffy.
- Add the almond flour and Xanthan gum to the butter and sweetener mix. Then add the vanilla flavor.
- Mix everything together. Mixture will be crumbly. Don't worry about it.
- With your hands bring mix together to form a dough ball.
- Transfer to a parchment paper lined 9 by 9 square pan
- Press the dough evenly till it covers the pan.
- Refrigerate for 30 mins.
- Bring out pan from the refrigerator with a bench scraper, slice the cookie dough into 24 cookies while in the pan. 8 slices vertically and 3 slices horizontally
- Pop back into the refrigerator then preheat your oven to 325.
- When your oven is ready, bring pan out of the refrigerator, then with the over hanging parchment paper lift cookies out of the pan onto a baking sheet.
- Using your bench Scraper gently shift the cookie dough cut outs away from each other so they don't glue together while baking.
- Bake for 20 mins then turn off heat of oven leave in oven for another 5 mins then bring out of oven and Cool completely. It would be soft when hot but hardens as it cools.

So delicious! An amazing texture and great flavor. I added a tsp or so of heavy cream because of the dry climate I live in. My kiddos are them and loved them so did my gluten free husband. Best keto baked good I have found so far!
