Based on popular demand after I presented our low carb community with the recipe hack of making cauliflower swallow in the microwave, I started getting requests for making eggplant swallow in the microwave. It’s basically the same concept with the microwaved cauliflower but hey if I can make it easier for you by sharing the recipe then I will ?

How to make eggplant swallow in the microwave

Blend washed Eggplant to a smooth paste, then transfer to a nut bag without squeezing let the water drain out. The reason you are asked not to squeeze is because we still need some moisture left in the eggplant paste.

Mix in the Psyllium husks powder then microwave for 5 mins

Stir well and enjoy

How to make eggplant fufu in the microwave

Another easy microwave option to save you time and give you free hands ?

1 large eggplant cut up, washed and Pureed till smooth

1 Tbsp Psyllium husks powder

Directions

Pour Pureed eggplant into a nut bag and let drain for about 2 mins ( don’t squeeze )

Transfer drained eggplant purée into a microwave safe bowl

Add the Psyllium husks powder, stir well to mix in.

Microwave on high for 5 mins

Bring out from the microwave and stir well. Divide into 3 portions

Transfer each portion to a saran wrap and wrap tightly.

Allow to rest for about 5 mins. ( as it cools it firms up some more)

Serve and enjoy.

Eat one portion and save the other portions in the refrigerator for up to a week or in the freezer for 2 weeks or more.

Reheating instructions

If stored in the freezer. Allow to thaw in the refrigerator overnight then microwave again to warm up.

If stored in the refrigerator, simply pop it out the microwave whenever you are ready to eat it.
