It's alternative swap for rice in a low carb menu. Just like cauliflower rice, Cabbage rice is a great way to enjoy 'rice if you are on a low carb/keto diet. I will be honest with you, I am yet to see a 100% swap for rice. Cauliflower rice or Cabbage rice, not even slim rice is a 100% swap for rice. But you know what? When you decide to change your life for the better you have to find a way to enjoy your life especially if your health depends on a low carb or keto diet.

For me I have realized that what I miss in the rice and stew combo is actually the stew and meat. But eating just stew and meat wouldn't tell my brain that I have eaten rice and stew. Since I want to trick my brain into believing I have eaten rice and stew, then cabbage rice, slim rice/ miracle rice or cauliflower rice will do the trick.

What you need to make the perfect cabbage rice.

    • Cabbage
    • Vinegar
    • Hot water
    • Sieve
    • Salad spinner
    • Paper towel

    How to make cabbage rice.

    • Cut the cabbage in two, remove the core completely then cut it up as small as you can possibly as close to rice as you can.
    • Soak in Distilled white Vinegar or or salt water for about 2 mins
    • Then blanch in boiling water for 10 secs.
    • Drain completely. A salad spinner is very helpful in this stage. It will help get as much moisture as possible out of the cabbage. Alternatively, line your colander with paper towel then dab dry with more paper towel.

Why do you soak in vinegar or salt water? Does it change the texture?

        Hi Sarah,
You soak in Vinegar or salt water to help remove germs. Also vinegar can help to reduce the taste of cabbage and make it a bit more bland. Making it easier to tell the brain it’s rice ?. Thanks for stopping by.

For a day. Since it’s a vegetable It’s always best to make it fresh.

Hi, I tried it (and added my own twist) and my husband and I loved it! Now I can add it to my other two options of cauliflowerice and spiralized veggies (zuccini, swede, butternut squash).
Thanks for sharing this recipe! 🙂

          Hi Chichi
I stir fried a mix of finely diced onions, garlic & ginger, added veggie stock cubes, seasoning, then a mix of finely diced carrots and mixed peppers, then added a handful of peas and the well drained cabbage. Delish!! 😋

No, thank YOU for sharing your alternative cabbage recipe. I prefer the texture; I think it’s more rice-like than cauliflower especially with a power chopper.
              Thanks, Chichi 🙂
